How does Thor's speed and reflexes compare to someone like Quicksilver and/or Speed Demon?

They are not as fast, nowhere near.
You are no doubt conflating Thor’s ability to travel great distances via his hammer and its space-warping capabilities with land speed, with combat speed. But they’re not the same thing.
In a race, Quicksilver or Speed Demon would be to the finish line practically before Thor started to run.
