Well, the incursions in NEW AVENGERS are ongoing, the book made it clear that the incursions would occur at regular intervals more or less indefinitely until the Earth is destroyed (or until the team figures out how to stop them, I assume). So if Ultron conquers the world who takes care of the NEXT incursion?

Either he does, or somebody in another universe does. But the future still appears to be there–Kang is fine, after all, as well as the assorted alternate futures of the X-books. So perhaps the circumstances surrounding these Incursions, these collisions between parallel realities, are more complex than you yet know.
