considering how much interest is being shown on the Summers/Grey family recently, why haven't we seen Nate (aka X-Man) at all since New Mutants got cancelled?

For the same reason that we haven’t seen Morgan Stark in ages despite there being a much greater interest in Iron Man than ever before–one thing doesn’t really have anything to do with the other thing. If there’s a story in which there’s a role for X-Man, then I’m sure he’ll appear again. Until then, he’ll be warming the bench alongside poor Morgan.
