Is it worth getting the first oversized hardcover of Thor: God of Thunder or is it going to end up like Hawkeye where there's only one and then the omnibus? I'm not game for being screwed over again.

Nobody is screwing anybody over here.
There is absolutely no guarantee that we’re going to release absolutely everything in teh same collected format. That goes for HCs, Oversized HCs, Omnibuses, softcover TPBs, and stacks of comics with a rubber band around them. It all depends on how well those books perform in that format as to whether there will be successive volumes in that format.
So on THOR: GOT, buy it in the format you like. But don’t be under any illusions that this guarantees you subsequent volumes in the same format. There might be some, and then again, there might not be.
